  • Abstract
    Classification of bovine muscles was determined from ultrasonic data. Samples of three muscle types were taken from animals of different ages. Acoustical parameters (velocity, attenuation and backscattering intensity) were used to classify them according to biological factors (castration, muscle type and animal age). Some global classification results gave significant scores (over 80% of well classified samples) and certain sample groups resulted in 100% successful classification. Most of classification results could be related to sample chemical composition
