    In this paper, the optimal protease and enzymatic conditions in the production of angiotensin I-converting enzyme (ACE) inhibitory hydrolysates derived from oil-tea seed meal (OTSM) protein was screened and optimized, respectively. The maximum ACE inhibition (ACEI) was obtained by alcalase hydrolysates in the screening experiment. Therefore, the alcalase was employed as enzyme in the optimization assay. With the aid of response surface methodology (RSM), the optimum hydrolysis conditions and statistical model for experimental validation were determined. The applicability of the model designed was confirmed and there was no significant difference (P>;0.05) between the final mean value of ACEI (79.25 % (n = 3)) and the predicted ACEI (77.78 %). According to the data shown in this work, it could be concluded that the alcalase hydrolysates derived from OTSM protein possessed highly suppressing activity against ACE in vitro and the model obtained through RSM was efficacious in predicting the ACEI in the preparation of ACE inhibitory hydrolysates.
