Abstract :
The extractive technique of allicin was investigated in this paper. The optimum extractive condition of allicin was determined through orthogonal design and response surface analysis as follows: the enzymatic hydrolysis time was 32.4min; temperature was 30; pH was 6.0; ratio of material to ethanol was 1:6.4; extracting time was 60min; extracting temperature 27.4; 95% ethanol. Under such condition, the extraction yield of allicin was 2.810/00 which was in good agreement with the response surface model.
