Abstract :
Different concentration oligosaccharide was added in goat milk. Effect of Xylo-oligosaccharide (XOS) and Fructo-oligosaccharide (FOS) on growth of Lactobacillus acidophilus, Bifidobacterium longum and L. rhamnosus was studied. The addition of each substance (w/v) was 0.0%, 0.1%, 0.5%, 1.0% 1.5% and 2.0%The methods were analyzed titratable acidity (°T), pH and enumeration that using reconstituted skim milk media as the control. All samples were incubated at 37 □ for 18h. The addition of each substance (w/v) was 0.0%, 0.1%, 0.5%, 1.0% 1.5% and 2.0%Results were as follows: addition of XOS has the significant increased effect on growth of B. longum and L. rhamnosus and a certain inhibition for L. acidophilus. FOS has significant promotion effect on the growth of B. longum, but not obvious for L. acidophilus and L. rhamnosus. So, XOS and FOS can be added as beneficial factor of probiotics in goat milk.
