Abstract :
This article describes the two important concepts in the gray theory that is the gray relational analysis and the gray model. It establishes the GM(1,2) model between extraction rate index and the other four factors that is temperature, feed water ratio, PH value and the time in a wheat bran extract polysaccharide, and provides with a new scientific analysis methods for Food Processing Industry.
