چكيده فارسي :
اورسوليك اسيد (كه به نام‌هاي ursol، prunol، malol، 3β-hydroxyl-urs-12-en-28-oic acidنيز شناخته شده است) تري ترپنوئيد 5 حلقه‌اي چربي دوستي مي‌باشد كه در طيف وسيعي از گياهان و ميوه‌ها يافت مي‌شود. با توجه به كشف فعاليت‌هاي بيولوژيكي بالقوه و خواص دارويي در چند دهه‌ي اخير بسيار مورد توجه قرار گرفته است. در اين مقاله مروري اطلاعاتي درباره‌ي منابع غذايي حاوي اورسوليك اسيد، نحوه‌ي بيوسنتز، استخراج از منابع گياهي، ميزان جذب، توزيع و همچنين اثرات حفاظتي آن بر روي ارگان هاي بدن نظير مغز، ماهيچه اسكلتي، كبد و... خواص فارماكولوژي ديگري نظير فعاليت ضد سرطان، ضد التهاب، ضد ديابت و فعاليت ضد ميكروبي در برابر سويه هاي متعددي از باكتري ها، قارچ ها و ويروس هايي نظير HIV، HBV و... بررسي مي شود. اين مطالعات نشان مي‌دهد كه اورسوليك اسيد مي‌تواند يك كانديداي بالقوه‌اي جهت پيشگيري از طيف وسيعي از اختلالات و بيماري‌هايي نظير، آلزايمر، آترواسكلروزيس، آتروفي، التهاب ريوي، چاقي، انواع سرطان(كبد، معده، روده، پانكراس، پوست و..)، ديابت نوع 2، HIV و... همچنين پيري و بيماري‌هاي مرتبط با آن باشد. در پايان اميدواريم اين مقاله مروري با معرفي عامل‌هاي بالقوه مفيدي از اورسوليك اسيد در موارد مصرف غذايي، دارويي، پزشكي، آرايشي و بهداشتي مورد توجه عموم قرار گيرد.

Ursolic Acid ( as known, ursol, prunol, malol, 3β-hydroxyl-urs-12-en-28-oic acid) is a
natural lipophilic, triterpenoid which exist in wide range of plant and fruits. In recent
decades, it was appreciated due to biological potential and therapeutic effects of this
compound. In this review article, it is tried to explain the source of food which exist
Ursolic Acid, biosynthesis, extraction and purification, absorption level, distribution,
and also pratective effects on the body organs such as brain, skeletal muscle, liver and
pharmacological effects such as anti-cancer effect, anti-inflammatory, anti-diabetics and
anti-microbila in opposed of variety of bacteria, fungi and virus as like as HIV, HBV. In
addition, this review study showed that Ursolic Acid may a potential candidate in
prevention of dysfunction and diseases such as Alzheimer, atherosclerosis, muscle
atrophy, pulmonary inflammation, overweight, the type of cancers (liver, stomach,
intestine, pancreas, skin and so on), diabetes type 2, HIV and also aging and age-related
diseases. Finally, this article hoped to present beneficial effects of Ursolic Acid in
utilizing of food, drug, medicine, cosmetics.
