چكيده فارسي :
ﻣﻘﺪﻣﻪ: ﻣﻄﺎﺑﻖ ﺑﺎ ﻃﺐ ﺳﻨﺘﯽ اﯾﺮان ﺷﯿﺮ ﺷﺘﺮ ﺑﻪ دﻟﯿﻞ داﺷﺘﻦ وﯾﺘﺎﻣﯿﻦﻫﺎ، ﭘﺮوﺗﺌﯿﻦﻫﺎ و آﻧﺰﯾﻢﻫﺎي ﻣﺨﺘﻠﻒ داراي ﻓﻌﺎﻟﯿﺖ آﻧﺘﯽ اﮐﺴﯿﺪاﻧﯽ ﺑﺎﻻﯾﯽ ﻣﯽﺑﺎﺷﺪ. ﻋﻼوه ﺑﺮ اﯾﻦ ﺷﯿﺮ ﺷﺘﺮ داراي اﺛﺮات ﻣﻬﺎري ﻗﻮي ﺑﺮ ﻋﻠﯿﻪ ﺑﺎﮐﺘﺮي ﻫﺎﺳﺖ. در اﯾﻦ ﭘﮋوﻫﺶ ﻓﻌﺎﻟﯿﺖ آﻧﺘﯽ اﮐﺴﯿﺪاﻧﯽ ﺷﯿﺮ ﺷﺘﺮ ﺑﺮ ﻋﻠﯿﻪ اﺳﺘﺮس اﮐﺴﯿﺪاﺗﯿﻮ ﺣﺎﺻﻞ از ﻋﻔﻮﻧﺖ ﺳﺎﻟﻤﻮﻧﻼ ﺗﯿﻔﯽ ﻣﻮرﯾﻮم در ﺷﺮاﯾﻂ in vivo ﺑﺮرﺳﯽ ﺷﺪ. ﺑﻪ دﻧﺒﺎل ﻋﻔﻮﻧﺖ، ﺳﻠﻮل ﻫﺎي ﻓﺎﮔﻮﺳﯿﺖ اﻟﺘﻬﺎﺑﯽ ﻓﻌﺎل و ﺑﺎ ﺗﻮﻟﯿﺪ ﺳﺎﯾﺘﻮﮐﯿﻦ ﻫﺎي ﭘﯿﺶ اﻟﺘﻬﺎﺑﯽ ﻣﻨﺠﺮ ﺑﻪ آزادﺳﺎزي رادﯾﮑﺎل ﻫﺎي آزاد اﮐﺴﯿﮋن ﻣﯽ ﮔﺮدﻧﺪ ﮐﻪ از ﻃﺮﯾﻖ ﭼﻨﺪﯾﻦ ﻣﮑﺎﻧﺴﯿﻢ از ﺟﻤﻠﻪ ﭘﺮاﮐﺴﯿﺪاﺳﯿﻮن ﻟﯿﭙﯿﺪﻫﺎي ﻏﺸﺎﯾﯽ و آﺳﯿﺐ اﮐﺴﯿﺪاﺗﯿﻮ ﭘﺮوﺗﺌﯿﻦ ﻫﺎ وDNA ﺑﺎﻋﺚ آﺳﯿﺐ ﻫﺎي ﺳﻠﻮﻟﯽ ﻣﯽ ﮔﺮدﻧﺪ. ﻣﻮاد و روش ﻫﺎ: رت ﻫﺎي ﻧﮋاد وﯾﺴﺘﺎر )g 150±20( ﺧﺮﯾﺪاري و ﺑﻪ ﭘﻨﺞ ﮔﺮوه ﻫﺸﺖ ﺗﺎﯾﯽ ﺗﻘﺴﯿﻢ ﺷﺪﻧﺪ. ﮔﺮوه A: رت ﻫﺎي آﻟﻮده ﺑﻪ ﺳﺎﻟﻤﻮﻧﻼ ﺗﯿﻔﯽ ﻣﻮرﯾﻮم ﺑﺎ ﺷﻨﺎﺳﻪ )14028 ATCC(, ﮔﺮوه B: آﻟﻮده ﺑﻪ ﺳﺎﻟﻤﻮﻧﻼ ﺗﯿﻔﯽ ﻣﻮرﯾﻮم ) 1/5×108CFU/ml( و ﺗﯿﻤﺎر ﺑﺎ ﺷﯿﺮ ﺷﺘﺮ )33ml/Kg(، ﮔﺮوه C: آﻟﻮده ﺑﻪ ﺳﺎﻟﻤﻮﻧﻼﺗﯿﻔﯽ ﻣﻮرﯾﻮم و ﺗﯿﻤﺎر ﺑﺎ 5mg آﻧﺘﯽ ﺑﯿﻮﺗﯿﮏ ﺳﻔﯿﮑﺴﯿﻢ، ﮔﺮوه :Dﺗﯿﻤﺎر ﺑﺎ ﺷﯿﺮ ﺷﺘﺮ ﺑﻪ ﺗﻨﻬﺎﯾﯽ و ﮔﺮوه E: ﮐﻨﺘﺮل ﺗﺰرﯾﻘﯽ. ﭘﺲ از ﭘﺎﯾﺎن دوره ﺗﯿﻤﺎر, ﺣﯿﻮاﻧﺎت را ﺑﯿﻬﻮش و ﺑﻪ ﻣﻨﻈﻮر اﻧﺪازه ﮔﯿﺮي ﺳﻄﺢ ﻓﻌﺎﻟﯿﺖ آﻧﺰﯾﻢ ﻫﺎي ﮐﺎﺗﺎﻻز وﺳﻮﭘﺮاﮐﺴﯿﺪاز, ﺑﺎﻓﺖ ﻫﺎي روده, ﮐﺒﺪ وﮐﻠﯿﻪ ﺣﯿﻮاﻧﺎت ﺟﺪا ﺷﺪ. ﯾﺎﻓﺘﻪ ﻫﺎ: ﻧﺘﺎﯾﺞ ﺣﺎﺻﻞ از ارزﯾﺎﺑﯽ ﺳﻄﺢ ﻓﻌﺎﻟﯿﺖ آﻧﺰﯾﻢ ﻫﺎي آﻧﺘﯽ اﮐﺴﯿﺪاﻧﯽ در ﺑﺎﻓﺖ ﻫﺎ ﻧﺸﺎن داد ﮐﻪ ﺳﻄﺢ ﻓﻌﺎﻟﯿﺖ اﯾﻦ آﻧﺰﯾﻢ ﻫﺎ در ﮔﺮوه ﻫﺎي آﻟﻮده ﺑﻪ ﺳﺎﻟﻤﻮﻧﻼ ﺗﯿﻔﯽ ﻣﻮرﯾﻮم ﮐﺎﻫﺶ, در ﺣﺎﻟﯿﮑﻪ ﺑﻪ دﻧﺒﺎل ﺗﯿﻤﺎر ﺑﺎ ﺷﯿﺮ ﺷﺘﺮ و ﻫﻤﭽﻨﯿﻦ ﺷﯿﺮ ﺷﺘﺮ و آﻧﺘﯽ ﺑﯿﻮﺗﯿﮏ اﯾﻦ ﮐﺎﻫﺶ ﺗﺎ ﺳﻄﺢ ﻧﺮﻣﺎل ﺗﻌﺪﯾﻞ ﺷﺪ. ﻧﺘﯿﺠﻪﮔﯿﺮي: ﻧﺘﺎﯾﺞ ﺣﺎﺻﻞ از اﯾﻦ ﭘﮋوﻫﺶ ﺑﯿﺎﻧﮕﺮ آن اﺳﺖ ﮐﻪ ﺷﯿﺮ ﺷﺘﺮ ﻧﻘﺶ ﻣﻔﯿﺪي ﺑﻪ ﻋﻨﻮان ﻣﮑﻤﻞ ﻏﺬاﯾﯽ و آﻧﺘﯽ اﮐﺴﯿﺪاﻧﯽ در ﺑﻬﺒﻮد و رفع آسيب هاي كبدي و كليوي حاصل از باكتري سالمونلاتيفي موريوم دارد
چكيده لاتين :
Camel milk has high antioxidant activity because of vitamins, protein and different enzymes and it can play an important role in the reduction of oxidative stress. Furthermore, camel’s milk has a stronger inhibitory effect against bacteria. In this research survey the protective effect of camel milk against oxidative stress infection caused by Salmonella typhimurium in vivo conditions has been investigated. Salmonella infection activated phagocytic inflammatory cells by producing pro- inflammatory cytokines causes the release of nitrogen and oxygen free radicals which it results in its cellular damage through like membranes lipids peroxidation and DNA and protein oxidative. Materials and Methods: Male Wistar rats (150±20g) divided into five groups (n=8). Group < br />A: contaminated with Salmonella typhimurium (ATCC14028). Group B: Contaminated with Salmonella typhimurium and treated by camel milk (33ml/kg). Group C: contaminated with Salmonella typhimurium (1.5×108) and treated by camel milk and antibiotic cefixime (400mg/kg). Group D: treatment with camel milk. Group E: Injection control. After completion of the course, animals became unconscious. The animals decreased and their intestine, liver, and kidney were separated and the level of enzyme activity like SOD and CAT were checked in the tissues. Results: Statistical analysis showed that the level of activity of enzymes SOD and CAT decreased in the tissues of the infected group to Salmonella typhimurium, and by following treatment with camel milk and treatment with camel milk and antibiotics, this reduction increased to a normal level. Conclusion: Camel milk plays a useful role as antioxidant nutritional supplement against Salmonella typhimurium in rats.
