Noushabad coffee: The tradition of Cooking and its Functions

در فرهنگ نوشيدني­ هاي ايراني، قهوه از جمله نوشيدني‌هاي وارداتي به شمار مي­رود كه به تدريج در فرهنگ ايراني جايگاه ويژه ­اي پيدا كرده و رنگ و بوي ايراني به خود گرفته است. سنت قهوه‌نوشي در ايران احتمالا به روزگار صفويه مي­ رسد. اين نوشيدني گرم به تدريج از محبوبيت زيادي برخوردار­ شد و از دربارها و طبقات فرادست جامعه به ميان مردم راه يافت؛ به طوري كه در مناطق مختلف ايران با شيوه­ هاي متنوع، تهيه و عرضه شد. در اين ميان، قهوه نوش‌آباد شيوه تهيه مخصوص و متفاوتي دارد و زمان زيادي براي آن صرف مي­ شود. شهر تاريخي نوش­ آباد در حاشيه كوير مركزي ايران قرار دارد و از توابع بخش مركزي شهرستان آران و بيدگل است. اين قهوه غليظ و شيرين است و عطر گلاب، هل و دارچين از آن به مشام مي‌رسد. شركت‌كنندگان در مراسم­ گوناگون مانند سوگواري‌هاي محرم و مجالس ترحيم با اين قهوه در حسينه ­ها، مساجد و خانه ­ها پذيرايي مي‌شوند. نوشيدن قهوه در ميان مردم نوش­ آباد، همچنان رسمي ماندگار و زنده در فرهنگ مردم اين منطقه است. در اين مقاله با شيوه توصيفي- تحليلي براي تبيين جايگاه قهوه نوش­ آباد به لحاظ تاريخي، فرهنگي و اجتماعي تلاش مي‌شود. براي نيل به اين هدف، ضمن تشريح شيوه تهيه قهوه، كاركردهاي مذهبي، فرهنگي و اجتماعي آن در ميان مردم نوش ­آباد بيان مي‌شود. بر اساس يافته‌هاي پژوهش، قهوه نوش ­آباد در تحكيم پيوندهاي اجتماعي و تقويت هويت فرهنگي و مذهبي مردم نوش­ آباد نقش مؤثر و بسيار مهمي دارد

In the Iranian drink culture, coffee is one of the imported drinks that has gradually gained especial status in Iranian culture and has acquired an Iranian flavor. The tradition of drinking coffee in Iran probably goes back to the Safavid era. This hot beverage gradually became popular and reached out of the courts and the upper classes of society to ordinary people; thus in different regions of Iran was produced in various ways. Noushabad coffee has a different especial cooking style and It takes a long time to make it. Noushabad as a historical city is located in margin of the central desert of Iran and in the central part of Aran/Bidgol province. This coffee is thick and sweet, with rose-water, cardamom and cinnamon aroma. People who attend various ceremonies such as Moharram mourning and funerals are served with this coffee in husseiniyehs, mosques and homes. Drinking coffee by Noushabad people is still a living tradition in the cultural life of the people of the region. This paper attempts to explain the status of Noushabad coffee in its historical, cultural and social aspects with a descriptive-analytic method. To achieve this goal, while describing the method of cooking, its religious, cultural and social functions among this people have been expressed. According to The findings, Noushabad coffee plays an important roles in strengthening the social ties and the cultural and religious identities of this people.
