تصحيح و توضيح چند اصطلاح حوزۀ اطعمه در كلّيات بسحاق شيرازي

The Correction and Explanation of Some Terms in the Field of Food in the Boshāq's Dīvān

شيخ جمال‌الدّين (فخرالدّين) بسحاق اطعمۀ شيرازي، از شاعران و نويسندگان نقيضه‌سراي قرن هشتم و نهم هجري و عصر تيموري است. او نقضيه هاي بسياري را با توجّه به آثار مشهور شاعران و نويسندگان فارسي نوشته است كه در نوع خود كمنظيرست. محور سخن بسحاق، "اطعمه" و توصيف آنهاست. كلّيّات بسحاق كه شامل متوني منظوم و منثورست، امروز براي آگاهي از اصطلاحات خاص اطعمه، از منابع دست‌اوّل محقّقان است. از اين رو، توضيح برخي از اصطلاحات دشوار در اين متن و يافتن صورت صحيح آنها، از ضروريّات كار مصحّح و پژوهشگر اين حوزه است كه بي دانستن و تشخيص آنها، نمي‌توان به تصحيحي منقّح دست يافت. گفتني است كه اين اصطلاحات به كار فرهنگ‌نويسان هم مي‌آيد. كلّيّات بسحاق را نخستين بار ميرزاحبيب اصفهاني در سال 1302ق منتشر كرد و بيشترينۀ ارجاع‌هاي فرهنگنويسان به همين چاپ است. اخيراً مركز پژوهشي ميراث مكتوب آن را با مقدّمه و فهرستهايي به كوشش منصور رستگارفسايي منتشر كرده است. در اين چاپ بسياري از كلمه‌هاي حوزۀ اطعمه، بي هيچ توضيحي رها شده يا به خطا معني شده‌اند. در اين مقاله، با توجّه به اطّلاعات درون‌متني كلّيّات بسحاق و نيز ديگر منابع جنبي، به تصحيح و توضيح برخي از اين اصطلاحات مي‌پردازيم.

Boshāq is one of the Parody poets and writers of the 8th and 9th centuries A.H. and the Timurid era. He has made Parody for many verses of Persian poets that are unique in their kind. Boshāq's Dīvān are a collection of verse and prose and its axis is to define and describe different types of food. This book is one of the first hand sources for researchers to know the specific terms in this field. Explaining some difficult terms in this text and finding their correct form is one of the necessities of corrective work and research in this field, without knowing and recognizing them, a corrective correction can not be obtained. It should be noted that these terms are used by lexicographers. Boshāq's Dīvān published for the first time in Istanbul by Mirzā Habib Esfahāni in 1302 A.H., and are the most references by lexicographers to this edition. Recently, the Written Heritage Research Center has published it with introductions and index by Dr. Mansour Rastegār-fasāei, and due to the large number of interested people, it has reached its third edition. In this edition, many words in the field of food have been omitted without explanation or misinterpreted. In this article, we will correct and explain some of these terms, considering the in-text information of Boshāq's generalities and other ancillary sources.
