چكيده فارسي :
ضرب‌المثل‌ها از بخشهاي مهم فرهنگ عامه به شمار مي‌آيند كه بيشتر برگرفته از زندگي مردم هستند. خوراكها كه در زندگي مردم نقش بسزايي دارند، از مهمترين عناصري هستند كه در ضرب‌المثل‌ها بازتاب فراواني يافته و به صورت‌هاي مختلف و با موضوعات متنوع در اين شاخه از ادبيات عامه به كار رفته‌اند. در اين نوشتار تلاش بر اين است تا با روش توصيفي-تحليلي، از نوع تحليل محتواي كيفي و گردآوري اطلاعات كتابخانه‌اي، از زواياي مختلف به بررسي بازتاب خوراكها در ضرب‌المثل‌هاي استان فارس پرداخته شود. بر اساس يافته‌هاي اين پژوهش، خوراكها در شكل‌گيري هويت فرهنگي مردم استان فارس و ساخت ضرب‌المثل‌ها در اين استان نقش بسزايي دارند. محيط جغرافيايي، نگاه فرهنگي، ديني و اجتماعي در ساخت مثل‌ها بر پايه خوراك نقش اساسي دارد. عناصري مانند وسايل پخت، محتويات، وسايل خوردن خوراك، مراسمي كه در آنها خوراك‌هايي خاص خورده مي‌شود، سخت بودن پخت خوراك، شكل نوشتاري خوراكها در مثل‌ها مورد توجه قرار گرفته است تا با استفاده از اين ابزارها و مؤلفه‌ها، مسائلي همچون دخالت بيجا در كار ديگران، تربيت درست، فراموش كردن گذشته، مهمان‌نوازي، بي‌ارزش بودن هديه و اشخاص، گله از بخت و اقبال، تحميل كردن چيزي بر كسي، فقر و ناداري، پرهيز از حرام‌خوري، قناعت و از همه مهمتر تلاش كردن به تصوير كشيده شود. به طور كلي هدف از به كار بردن ضرب‌المثل‌ها اين بوده است كه مسائل اخلاقي در جامعه نهادينه شود.

Proverbs are important parts of popular culture and are mostly taken from people's lives. Foods that play an important role in people's lives are of the most important elements widely reflect on proverbs. They are used in various ways with various topics in this branch of popular literature. In this article an attempt is made to study the different aspects of this reflection by the means of descriptive-analytical method, qualitative content analysis using library documents. The findings show that foods have played an important role in shaping the cultural identity of this people and their proverbs. Geographical environment and cultural- religious- social perspective play a key role in making proverbs based on food. Elements such as cooking utensils, material contents, utensils used for taking food, rituals surrounding taking food, difficulty of cooking food and written form of foods have been considered in the proverbs to address issues such as disturbing work of others, proper upbringing, forgetting the past, hospitality, worthlessness of gifts and people, complaint of destiny, imposing something upon someone, poverty, restraint of profiteering, contentment and as the most important, making effort. Entirely, the reason of proverbs is constituting the ethical issues in a society.
