Rosemary and Sage by Supercritical Carbon Dioxide on Canola Oil

Supercritical carbon dioxide was employed to obtain extracts from both rosemary and sage. Total phenolic compounds in the extracts were measured. The effects of extracts on the oxidative stability of canola oil were determined employing induction period measurements and peroxide value determinations, as the means to evaluate oxidative rancidity. Synergistic activities of the extracts with ascorbyl palmitate and citric acid were studied. The antioxidant activities of the extracts were compared with TBHQ. The results indicated that extracts isolated from rosemary and sage were rich sources of antioxidants due to the presence of natural phenolic compounds.
