Plastics and their Applications in Modified Atmosphere Packaging of Foods:A Review

بسته بندي با اتمسفر تغيير يافته، نوعي از فنّاوري است كه با كمك كنترل دما، به منظور نگهداري و حفظ كيفيت مواد غذايي فاسد شدني پايه گذاري شده است. تنوع زياد مواد غذايي و عدم تطابق بين نيازهاي آن ها با ويژگي هاي فيلم مورد استفاده در بسته بندي اين محصولات، اغلب منجر به عدم دستيابي به اهداف اين روش بسته بندي مي شود. بنابراين نكته كليدي براي بهره مندي از فوايد ارزشمند اين روش، پس از شناخت دقيق نيازهاي ماده غذايي مورد نظر، انتخاب يك فيلم بسته بندي مناسب است. پلي اتيلن سبك، پلي اتيلن سبك خطي، پلي اتيلن سنگين، پلي پروپيلن، پلي وينيل كلرايد، پلي استر، پلي اتيلن ترفتالات و پلي آميد (نايلون)، برخي از متداول ترين فيلم هاي پلاستيكي مورد استفاده در بسته بندي به روش اتمسفر تغيير يافته هستند. ويژگي هاي فيلم بسته بندي كه مي تواند بر تغيير اتمسفر درون بسته اثرگذار باشد و بايد به دقّت انتخاب شود شامل: نفوذپذيري فيلم بسته بندي نسبت به اكسيژن، دي اكسيد كربن و بخار آب، ضخامت فيلم، مساحت سطح و فضاي خالي داخل بسته است. برخي از اين ويژگي ها با تركيب كردن اين فيلم ها با هم و يا با مواد ديگري نظير كاغذ و آلومينيوم طي فرآيندهاي كواكستروژن، پوشش دار كردن، لامينه كردن و متالايز كردن قابل تغيير و اصلاح مي باشد. همچنين فنّاوري هاي جديد نيز مانند متالوسن، منفذدار كردن و به كارگيري نانوكامپوزيت ها در روش بسته بندي با اتمسفر تغيير يافته، امكان توليد فيلم هايي با ويژگي هاي مورد نياز براي دامنه وسيعي از مواد غذايي را ايجاد كرده است. بنابراين توسعه فرصت هاي جديد براي بهره مندي بيشتر از مزاياي اين روش و در نتيجه گسترش بيش از پيش آن، اهميت شناخت هرچه بيشتر اين فيلم ها و فنّاوري ها را براي انتخاب و به كارگيري صحيح ضروري ساخته است. در اين مطالعه، ضمن معرفي انواع فيلم هاي پلاستيكي، بر مطالعات انجام شده در زمينه كاربرد اين پوشش ها در بسته-بندي به روش اتمسفر تغيير يافته مروري صورت گرفته است.

Modified atmosphere packaging (MAP) is a well-established technology, which in combination with proper temperature management helps to extend the shelf life and maintaining quality of perishable products. Variety of food products and mismatch between their needs and characteristics of the film used in packaging these products often leads to failure to achieve the objectives of this technology. Thus, the selection of packaging film is the key factor for a valuable and efficient use of MAP. Low-density polyethylene (LDPE), linear low-density polyethylene (LLDPE), high-density polyethylene (HDPE), polypropylene (PP), polyvinyl chloride (PVC), polyester, polyethylene terephthalate (PET) and polyamide (Nylon) are some of the plastic films used in MAP technology. Characteristics of the film that can effect on atmosphere modification and must be carefully selected are film permeability to O2, CO2 and water vapor, film thickness, package surface area and free volume inside the package. The film properties can also be modified by combining the individual films with the same or different films or with the other materials such as paper or aluminum through processes of co extrusion, lamination, coating and metallization. Also the new technologies such as Misallocate, Perforated and using Nan composites in modified atmosphere packaging method (MAP) allows producing films with the required features for a wide range of food products. Therefore, the development of the new opportunities for more benefit from the advantages of this technique and thus expand further, cause the increasing of the importance of knowing more of these films and technologies for the precise selected and the correct application of them. In this study, the variety of plastic film and their applications in modified atmosphere packaging of foods was reviewed.
