زعفران گياه بومي ايران است كه از دوران باستان ايرانيان نحوه كشت و كار، كاربرد هاي تغذيه اي و مصارف دارويي مي شناختند. دانش بومي ايرانيان در ارتباط با زعفران بسيار غني بوده و امروزه كاربردي است كه ريشه علمي در متون كهن كشاورزي دارد. اين گياه در فرهنگ و ادبيات فارسي جايگاه ويژه اي پيدا كرده است كه نشانه پر ارزش بودن و عاشقي كه دور از معشوق به حال ناخوش گرفتار گرديده، مي باشد. در متون كهن كشاورزي، گياهشناسي و كليه مراحل كاشت، داشت و برداشت اين گياه تشريح و تبيين گرديده است ودر مرحله داشت دور آبياري براي مناطق مختلف دو بار توصيه شده است . بر اساس اين متون مهمترين آفات اين گياه جوندگان موش و خرگوش است. در كتب طب سنتي مصرف دارويي زعفران در قوت دادن احشاء داخلي ، مفرح بودن آن ، موارد مصرف ادويه اي و مصارف عطري گياه تشريح گرديده است . خطرات مصرف بالاي زعفران نيز در اين متون در بعضي متون نگارش يافته است.
