ﺗﺤﻘﯿﻖ ﺣﺎﺿﺮ ﺑﺎ ﻫﺪف ﺗﻌﯿﯿﻦ ﺗﺮﮐﯿﺐ ﺷﯿﻤﯿﺎﯾﯽ و ﭘﺮوﻓﺎﯾﻞ اﺳﯿﺪﻫﺎي ﭼﺮب ﺑﺎﻓﺖ ﻋﻀﻼﻧﯽ ﺳﻪ ﮔﺮوه از آزاد ﻣﺎﻫﯿﺎن رودﺧﺎﻧﻪاي و ﭘﺮورﺷﯽ ﺷﺎﻣﻞ ﻗﺰل آﻻي رﻧﮕﯿﻦ ﮐﻤﺎن رودﺧﺎﻧﻪاي و ﭘﺮورﺷﯽ (Oncorhynchus mykiss) و ﻗﺰل آﻻي ﺧﺎل قرمز ( Salmo trutta fario) اﻧﺠﺎم ﺷﺪ. در ﻣﺠﻤﻮع 27 ﻋﺪد ﻣﺎﻫﯽ ﻗﺰل آﻻي رﻧﮕﯿﻦ ﮐﻤﺎن رودﺧﺎﻧﻪاي، ﺧﺎل ﻗﺮﻣﺰ و ﻗﺰل آﻻي ﭘﺮورﺷﯽ از ﻣﺤﺪوده رودﺧﺎﻧﻪ ﻫﺮاز ﻧﻤﻮﻧﻪﺑﺮداري ﺷﺪ. ﻣﻄﺎﺑﻖ ﺑﺎ ﻧﺘﺎﯾﺞ زﯾﺴﺖ ﺳﻨﺠﯽ و آﻧﺎﻟﯿﺰ ﻻﺷﻪ )ﺧﺎﮐﺴﺘﺮ، رﻃﻮﺑﺖ، ﭘﺮوﺗﺌﯿﻦ و ﭼﺮﺑﯽ( اﺧﺘﻼف ﻣﻌﻨﺎداري ﺑﯿﻦ ﺳﻪ ﮔﺮوه ﻣﺸﺎﻫﺪه ﻧﺸﺪ. ﺑﯿﺸﺘﺮﯾﻦ ﻣﻘﺪار اﺳﯿﺪ ﭼﺮب اﺷﺒﺎع SFA) 0/787± 24/80)، ﺗﮏ ﻏﯿﺮ اﺷﺒﺎع MUFa) 1/638 ± 48/3 )و ﭼﻨﺪ ﻏﯿﺮ اﺷﺒﺎع 4/916 ±PUFA)45/95) ﺑﻪ ﺗﺮﺗﯿﺐ در ﻣﺎﻫﯽ ﻗﺰل آﻻي رودﺧﺎﻧﻪاي، ﺧﺎل ﻗﺮﻣﺰ و ﭘﺮورﺷﯽ دﯾﺪه ﺷﺪ ﮐﻪ ﺗﻔﺎوت ﻣﻌﻨﯽداري ﺑﯿﻦ ﺳﻪ ﮔﺮوه وﺟﻮد داﺷﺖ (0/05
چكيده لاتين :
: The purpose of this study was to determine the chemical composition and fatty acid profile of muscle tissue in three groups of Salmonids including: Rainbow trout river and farmed (Oncorhynchus mykiss) and red speckled trout (Salmo trutta fario(. A total of 27 rainbow trout of river and red speckled trout from the river Haraz and farmed fish were sampled from around the Haraz River. According to biometric and carcass analysis (ash, moisture, protein and fat), there was no significant difference between the three groups (P <0.05). The highest amount of SFA was 24.85 ± 0.87; MUFA, 48.33 ± 1.06 and PUFA, 45.95 in river trout, speckled red and farmed there was a significant difference between the three species (p < 0.05). But in the omega-3, omega-6, EPA and DHA, there was no significant difference between species. In all three groups of ω-3/ω-6 was higher than the recommended dose of experts. Based on the results a river trout, farmed and red speckled trout are very rich in nutritional value.
