In this paper we have compared the different mathematical methods for prediction of drying behavior
of potato, apple and banana in a convection tray dryer. Experiments have been conducted in different
conditions and their results have been compared with model predictions. This study showed that
consideration or ignoring of certain facts such as shrinkage may affect the model predictions. The
energy efficiency, diffusion coefficients and shrinkage were also obtained and discussed in different
experimental conditions.
