The Determination of the Effect of Retinol Palmitat on Oxidationstability in Sunflower Oil with the Rancimat Method
Abstract :
The addition of synthetic antioxidants to oils is the most effective method to prevent the autoxidation and to prevent the released oxy-free radicals. Sunflower oil is caused the production of excess most preferred and the low price oil in Turkey, In the world ranking soybean and palm oil after the most produced and consumed are among oils. In this study, determinationed of effect of retinol palmitat on oxidation stability of sun flower oil using rancimat method. This purpose were added different rates retinol palmitate in sunflower oils and investigated changes in induction times as sunflower oil and determined to be of different induction periods used different rates.
