Abstract :
Extrusion process degrades the grain starch, and increases dextrin and oligosaccharides. Based on this theory, we can give up the traditional boiling procedures with extrusion rice as a minor ingredient. It saves mash by 5%, energy on saccharification by 7-15% and increase the wort extract byl% to 6%, that net profit of beer has been increased by 10 30%/ton. Study the sugar components of extrusion rice so as to further reveal internal mechanism of extrusion machine and provide theoretical support tp applying it to beer producing. There is not similar domestic or international reports. There are several methods to determine soluble sugar, such as volumetry, colorimetry,polarimetry, refraction and tomographic methods. They are great methods but the steps are too complicated. High performance Liquid Chromatography (HPLC) is a new analytical technique which is developed in the past decades. The advantage of the method is fast, convenient, high resolution, good separation efficiency and reproducibility. Therefore, we use HPLC on soluble sugar´s determination as the main method. In this paper, we use external standard mensuration to establish HPLC method and determine quantitative of 5 kinds of reducing sugars samples.
