  • Abstract
Wort evaporating process is one of key processes in brewery workshop. It´s very important to model the process for control the evaporating intensity and product quality. A novel modeling method for wort evaporating process was introduced and the control system was designed based on the plant characteristic. According to compensation principle, a factor named fouling-compensator for controller was calculated by estimating the wort fouling resistance. The controller using fouling-compensator has a better performance against the fouling disturbance when system mode changes from dirty to clean and against the recipe disturbance when recipes change from one batch to another batch. The new method realized the automatic tuning of control parameters. The accuracy of evaporating intensity increased from ±1% to ±0.3%.
